Bikini Recipe

Yields 10 people

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Syrup: Combine the listed ingredients in a saucepan, bring to a gentle boil, agitating so the sugar melts. Next, turn off the burner allowing it to reach room temperature entirely. Pour to a sealable bottle, close it and store chilled, it will last for around a month.

For the Cocktail Base: Pour all the liquid ingredients into a big jug, let it rest for 60 minutes, then pass it through best through cheesecloth, making it fully clarified.

When ready to serve: Measure 85ml from the premix to a stirring glass filled with ice, and stir carefully for about 60 seconds to cool it down. Pour into a chilled martini glass or a similar vessel, top with some cranberries and finish with a brief mist with the mandarin essence over the drink.
